Grapes were picked at 39º Brix at harvest. Stainless stell fermented - the slow, cool fermentation took two months to "finish." In January, 2007 the primary fermentation was stopped at 18º Brix, when it seemed to have the right balance of alcohol, sweetness, and acidity.
